Five methods of loofah soup
1, Luffa Egg Soup

Ingredients: Luffa, eggs, salt, vegetable oil, lard.

Practice: take 2 eggs, break them, add proper amount of salt, stir them evenly, pour cooking oil into the pot, pour the egg liquid into the oil while it is hot, fry the eggs and put them into the pot for later use.

Peel the loofah and cut it into hob shapes. Pour water into the pot, add chopped loofah to boil, add fried eggs to cook, and add appropriate amount of lard and salt to serve.

2. Huanggu Fish and Luffa Soup

Ingredients: yellow bone fish sticks, loofah, 1 tomato, appropriate amount of pepper, salt, oil and cooking wine.

Practice: Wash the fresh yellow croaker, peel the loofah and cut it into hob shape, and wash and cut the tomato into pieces. Pour oil in a hot pan, add yellow croaker and fry until both sides are golden, add appropriate amount of cooking wine to remove fishy smell, add water to boil, add tomatoes and continue to cook for about 5 minutes, add loofah and cook for about 2 minutes, and finally add appropriate amount of spices such as pepper and salt to serve.

3. Bamboo sun and towel gourd soup

Ingredients: loofah, dictyophora, ginger, salt, oil and seasoning.

Practice: First soak the dictyophora in warm water and wash it for later use. Wash ginger and cut into powder for later use. Peel the loofah and cut it into small pieces. Add some water or broth to the pot and bring to a boil, then add loofah and dictyophora, then bring to a boil, add ginger, cook, and finally add pepper, edible salt and monosodium glutamate to taste.

4. Luffa pork liver lean broth

Ingredients: pork liver, lean pork, loofah, ginger 1 tablet, salt, monosodium glutamate.

Practice: Wash and slice pork liver and lean meat, marinate with cooking wine and salt for later use, peel loofah and cut into small pieces, and wash and slice ginger. Note: pork liver must be soaked in clear water, otherwise it will smell heavy.

5, loofah tofu soup

Ingredients: fresh loofah, tender tofu, ginger, garlic, salt, monosodium glutamate, seasoning, etc.

Practice: Loofah peeled and sliced for use. Wash tofu and cut it into small pieces, wash ginger and shred garlic, pour oil in a hot pot, add shredded ginger and minced garlic, stir-fry, add appropriate amount of water, add loofah and tofu, cook for 3-5 minutes on low heat, and season with appropriate amount of salt, monosodium glutamate, soy sauce and rice vinegar.
