Recipe practice:
1. Wash the whole duck, add cooking wine, ginger slices, onion, a little salt and water to cover the duck, and turn the heat down 10 minute to cook the duck.
Take the duck out and cool it immediately after cooking.
2. Prepare the ingredients when cooking duck meat.
Stir-fry the pepper and hammer it into powder.
Pour the oil into a clean wok (much more than the usual cooking oil). When the oil temperature is about 80 degrees, pour the hot oil directly into the bowl filled with Chili powder and stir well.
4. Cut the cold duck into pieces. Shred shallots. Garlic is pressed into garlic paste by a garlic press.
5. Add a little chicken soup to the sliced duck (you can add more chicken soup if you like gravy), then add salt, sugar, chicken essence, garlic paste, Jiang Mo pepper powder and white pepper powder, and pour in the cooked spicy oil and mix well.
