Materials:
Mackerel fillets, salt, Jiang Mo, cooking wine, oil.
Exercise:
1. Cut mackerel and marinate it with salt for one hour.
2. Apply Jiang Mo and cooking wine and marinate for half an hour.
3. Wash and absorb water with kitchen paper.
4. Burn the oil in the pot, and fry it in the pot for seven minutes.
5. After frying for one minute, turn to low heat and fry for another few minutes, then turn over and fry again.

Garlic mackerel
Materials:
One mackerel, three cloves of garlic, a little shredded ginger, a little salt, a little soy sauce, a little sugar, a little, half a bowl of water, a little cornflour, a little oil and a little cooking wine.
Exercise:
1. Wash the killed mackerel, and then clean the black film on the belly of the fish, so that there will be no fishy smell. Cut into thick slices and marinate with salt and shredded ginger 15 minutes.

Mackerel with ginger and onion oil
Materials:
6 pieces of mackerel meat (about 2.5cm each), egg liquid 1 piece, raw flour 1 bowl, and 5-6 onions (cut into sections).
1 onion (diced), 1 garlic (size 10), 6 slices of ginger (shredded), and half a teaspoon of salt.
Cooking oil, clear sauce, oyster sauce, half a teaspoon of sugar.
Exercise:
Dip mackerel pieces in egg liquid, and then dip them in cornflour.
Heat the oil, put the mackerel powder into the pot one by one, and fry until golden brown.
Take out the pot and put it on the plate.
Then add garlic and ginger salt into hot fish oil and stir-fry until fragrant.
Add onion and shallots and stir-fry for 5 minutes. Pour in the sauce and oyster sauce.
Finally, sprinkle half a teaspoon of sugar and mix well.
After the flameout, pour all the scallion oil on the crispy mackerel slices and serve.
Mackerel in black bean sauce
Ingredients: mackerel, seasoning salt, sugar, soy sauce, cooking wine, allspice powder, onion, ginger, peanut oil, sesame oil, lobster sauce and soup.
Exercise:
1. Wash mackerel, cut into thick slices, add onion and ginger and marinate for taste.
2. Fry the fish with 60% to 70% hot oil until the sauce is red. Saute chives and ginger, add lobster sauce, add soup, season, add fish pieces, simmer on low heat, collect juice on low heat, and add sesame oil.

Stewed mackerel with onion
Materials:
1 mackerel, 1 onion, 1 orange, ginger, garlic, salt, soy sauce, cooking wine and chicken essence.

2. Take the oil pan and fry the fish until golden on both sides. Set aside.
3. Tell the chopped onion and garlic to stir fry in the pan.
4. Add fried fish, cooking wine, soy sauce and pepper and simmer for a while.
Add a glass of orange juice from the pot (my daughter wants to add it, but it tastes good) and season it with chicken essence.
