Why can Fuzhou cuisine become the mainstream of Fujian cuisine?
As one of the eight major cuisines in China, people who know about Fujian cuisine know that Fujian cuisine is based on Fuzhou cuisine and then consists of flavors from all over Fujian. But do you know why it is based on Fuzhou cuisine?

Then, let's learn about Fujian cuisine culture with me!

Fuzhou, the capital of Fujian Province, is known as the "First City in Eight Fujian Provinces" and is the political, economic and cultural center of Fujian Province. The people of the Huang Dynasty said in the "Nine Fujian Fu": "The country is still better than the DPRK, and the eight governments are divided. It depends on the naturalization of Taiwan Province Province, one benefit and nine, like our Xinjiang, headed by Fuzhou. " As the first city in Bamin, Fuzhou has a history of 3000 years. It was once called Minzhong, Yexian, Dongye, Houguan, Jin 'an, Zhou Min, Fengzhou, Quanzhou and Changle. Especially since the establishment of the county system in the Han Dynasty, the jurisdiction of Houguan county at that time included "government, prosperity, security and Zhang".

With the change of dynasties, the central government strengthened its rule over Fujian. By the time of Chen Yongding in the Southern Dynasty (557-559), the first provincial-level organizational system "Zhou Min" came into being, and Fuzhou was the prefecture. In the 13th year of Tang Kaiyuan (725), the Governor's Office of Zhou Min was renamed as the Governor's Office of Fuzhou, which included not only Fujian, Fujian, Quanzhou and Zhangzhou, but also Chaozhou, forming five states. In the Northern Song Dynasty, the administrative divisions of Fujian were divided into Fuzhou, Tingzhou, Zhangzhou, Quanzhou, Jianzhou (Jianning House in the Southern Song Dynasty), Nanjianzhou, Shaowu and Xinghua, so it was originally called "Bamin". As the first city in Bamin, Fuzhou not only brought the culture, skills and customs of the Han nationality in the Central Plains to Fujian, but also became an important port for foreign economic and trade and cultural exchanges. As early as the Han Dynasty, the Book of the Later Han Dynasty, Zheng Hongchuan, recorded that in the eighth year of the founding of the People's Republic of China (83), "the old seven counties crossed their toes, donated and transported, and all came from Dongye and crossed the sea."

By the Tang Dynasty, Fuzhou had become the third largest trading port after Guangzhou and Yangzhou. Many goods arrive in Fuzhou first, then go upstream along the Minjiang River, enter Jiangxi by water or land, and then resell in the Central Plains. Tang Cui Zhiyuan wrote: "Ling Min, Pujiang, Huotong Road", and the scene of "ladder of all nations" appeared in Fuzhou. The five dynasties "involved far-reaching interests and attracted foreign businessmen"; In the song dynasty, "department stores entered the market with the tide boat, and thousands of wine vendors hung curtains"; In the Ming Dynasty, the Xingang and Hekou areas of Fuzhou "paid tribute by many ships and arrived at the estuary of Fuzhou", and "Chinese and foreign merchants gathered in various places".

1853, the Taiping Heavenly Kingdom Movement and the Shanghai Knife Society Uprising cut off the old tea road from Wuyishan to Guangzhou and the new tea road to Shanghai, making Fuzhou the only port in Wuyi tea area that can keep the export route unblocked, thus making Fuzhou one of the centers of international tea trade. Because of the black tea trade, Fuzhou has become one of the most important consular ports in China.
