Healthy vegetables (tea) - Oriental ginseng (burdock) recipe
Burdock can be used for cooking, stir-frying, mixing, frying, steaming, boiling, roasting, stewing, soup, stuffing and porridge. Eat whatever you want. Different tastes of burdock dishes can be made using techniques and ingredients from different cuisines. (1) Shacha Burdock
Ingredients: 500g fresh burdock, 30g Shacha sauce, 10g sesame paste, 10g peanut butter, 15g pickled pepper paste gram. Appropriate amounts of refined salt, monosodium glutamate, chicken essence, dry starch, and white sugar, a few lettuce leaves, and 1,500 grams of refined oil (approximately 50 grams consumed).
Method: Peel and wash the fresh burdock, cut into "one-shaped" strips (or use clear water burdock segments), soak in clean water for 10 minutes, remove and drain, and put in a basin. Add sand tea sauce, sesame sauce, peanut butter, refined salt, chicken essence, sugar, pickled pepper paste and mix well, then pat dry starch one by one and set aside. Heat a clean pot, add refined oil and heat until it is 70% hot. Dip and fry the burdock strips that have been powdered. When fried until golden brown, remove and drain the oil, and put it on a plate lined with lettuce.
(2) Burdock and pork ribs soup
Ingredients: 250 grams of burdock, 250 grams of pork ribs, a little coriander, 2 tsp salt, and a little pepper.
Method: Soak burdock slices in vinegar and water to prevent discoloration. Cut the ribs (or pork belly) into small pieces. Put water in the pot and bring to a boil. Add the ribs and burdock. After boiling, simmer over medium-low heat for about 20 minutes. Add salt and pepper to taste. Pour into a large bowl and sprinkle with coriander.
(3) Honey burdock
Ingredients: 1 jin of burdock, 240 grams of malt, 1 jin of sugar, 4 sour plums, and a little white sesame.
Method: 1. Cut burdock into 3 cm long sections, add water (the burdock must be pickled) and cook until cooked. Add sour plums and turn them up and down to infuse the flavor, then add sugar and continue to simmer over low heat until Dissolve the sugar, then stir in the maltose, and turn frequently to burn one side until the water dries up. 2. Stir in a little white sesame seeds before use to increase the deliciousness. Note: The water will evaporate easily if the pot is not covered.
(4) Burdock family
Ingredients: 1 catty of mutton, 1 catty of burdock, old ginger, appropriate amounts of wine, salt, and MSG.
Seasoning: just stew the meat.
Method: 1. First scald the mutton to remove the blood and fishy smell.
2. Peel and wash the burdock, and cut it with a knife.
3. Put the mutton, burdock, and ginger seasonings into the pot together until cooked. Add some wine, salt, and MSG before eating.
