Recipe practice:

4. Put it on the chopping board and crush it with a rolling pin for later use.
5. Steaming glutinous rice is the key. I have done it many times, and my experience is that glutinous rice is soaked 24 hours in advance. As for the degree of soaking, the soaked rice can be ground into powder with two fingers. Drain the water before steaming, so that the rice grains are elastic and the wine made of thin rice is not good to drink.
6. Let it cool naturally. Some practices are to wash rice with cold water while it is hot, which is very helpful for rice thinning ... Never-_ _-just put it in your hand and put it at the bottom of the bowl. Just warm or not. Sprinkle water slowly, about half a cup. This glass of water is used to separate rice grains. As shown in the figure. Rub the sticky rice grains gently, not into porridge. Thank you.
7. Stir the crushed distiller's yeast evenly before sprinkling, and leave a handful of distiller's yeast for use.
8. Just put it in a container and press it gently. Dig a hole in the middle with your finger and observe the wine.
9. Then scatter the remaining bunch of distillers' yeast in and around the hole. Cover it and keep warm. Just wrap clothes or quilts, depending on how much you want. Traditionally, clothes go with people. On this day, you can wrap as thick as you wear at home. Throw it aside and let the strain ferment automatically.
10.24 hours later, the groove began to ooze liquid, shaking with bubbles and smelling of wine.
1 1.48 hours later, the rice grains have already floated in the wine. At this time, you can directly put them in the refrigerator and slowly ferment at low temperature, and the next week will be more and more sweet.
