Formulation preparation:
One: wash and dry fresh duck eggs immediately after they are bought;
2. Preparation before curing: 400g of refined salt, 200g of high-alcohol liquor, 2 bowls, 1 flat chassis capable of holding 10 duck eggs, 1 rubber (plastic) gloves, 2-4 plastic bags for salted duck eggs and 1 bowl for wine.
Third, the pickling technique: put on gloves, dip a duck egg in wine and put it neatly in a flat chassis. According to 10 eggs in a group and arrange them in order (this is my experience), the last duck egg in each group waits for about 30 seconds after dipping in wine, and the wine on the egg is half dry. Dip 1 eggs in wine and put them in two groups (this is relatively safe). If it is too difficult, you can press 1: 65433. Just put it in a plastic bag (the above process is very important, otherwise it will be pickled badly, the egg yolk will be oily and the egg white will be hard), and so on. It's best to pack 50 pieces each. Tie the plastic bag tightly and store it.
Four: Pay attention to the preservation method: 10- 15 degrees Celsius for 20 days, then pour the eggs once and serve. If the salinity is moderate, you can put them in the refrigerator. If the temperature is 20-25 degrees Celsius, it can be eaten for 15 days, and if the salinity is moderate, it can be stored in the refrigerator.
Salted duck eggs don't need any cooking skills, just cook them in a pot, which is convenient and quick. Now it has become an indispensable part of our family's diet.
