The whole chicken breast was marinated with salt koji 65438+ 0-2 days in advance. If you are in a hurry, you can change the knife before marinating. It is not recommended to cut all into small pieces before marinating, because salt koji should be washed off after marinating. I used homemade salt koji (a course taught by teacher Dafu in the kitchen). If it is a commercially available salt koji, it will feel a little salty. Adjust the salt amount according to your own taste.
The marinated chicken should be translucent, the salt koji on the surface should be washed clean, and the kitchen paper towel should absorb the water on the surface of the chicken. Cut into bite-sized pieces for barbecue; Pleurotus eryngii, red pepper/green pepper/yellow pepper, onion and carrot were also cut into pieces of similar size. Put all the cut meat and vegetables in a large bowl, add olive oil, chopped black pepper, salt, March 8 sauce (I use Singapore Dachangyuan March 8 sauce, which is sweet but not salty, you can adjust it according to the taste of the sauce you use) and sweet pepper powder, mix well and marinate for half an hour.
Soak the bamboo stick in water in advance to avoid being burnt during baking. String the pickled ingredients on bamboo sticks and put them on a baking tray.
