Stewed turtle:

Turtle 1200g, ginger 30g, codonopsis pilosula 5g, red dates 20g, medlar 15g, lard 50g, cooking wine 20g, and proper amount of white vinegar.

Blanch the chopped soft-shelled turtle in boiling water, put some cooking wine when blanching, take it out and pour it in cold water, put lard and ginger slices in a hot pot, add soft-shelled turtle after frying, add white wine and vinegar after frying, add broth and Codonopsis pilosula after frying, and simmer slowly after increasing the fire.
