How to make hand-chopped meatloaf
1. Take 1 piece of fresh pork, and my personal preference is the ratio of four fat to six lean. Cut the lean meat into cubes, then mix the fat meat into it and chop it evenly with a kitchen knife; the criteria for good chop: pinch the meat with your hands, and it is considered good when each handful can be squeezed open. Put the chopped meat into a large basin and beat it hard repeatedly to make it elastic;
2. Use a microwave-friendly bowl with a lid of suitable size, drop a little sesame oil in the bottom of the bowl and rub it evenly with chopsticks; The purpose of this step is to prevent sticking and add flavor;
3. Add salt, sugar and light soy sauce to the minced meat and stir evenly, sprinkle with dry starch, drizzle with sesame oil and mix well, a small amount and several times. Pour water into the meat filling and stir the meat filling in the same direction. Pay attention to waiting until all the water from the previous time is "eaten" before adding the next time. In this way, beat the water filling until the meat filling becomes as "light" as a marshmallow and is so lubricated that it cannot be twisted. Put the meat filling into an oiled bowl specially designed for microwave ovens;

Flatten the meat filling, press it slightly to make a pit in the middle, break an egg into it, and pierce the egg yolk a few times with a toothpick to prevent it from "exploding" during the microwave process;5 . Cover the microwave oven-specific bowl, set the middle button to "OPEN", put it in the microwave oven at "medium-high heat" and "ding" for 2 minutes, take it out, and pour two tablespoons of hot stock along the edge of the bowl (this step can also be omitted) ), continue to cover and "ding" for 4-5 minutes.
