The method of making large prawns is as follows (take braised prawns as an example):
1. Remove the shrimp lines and tentacles from the large prawns, chop onion, ginger, garlic and chili, and mix with soy sauce, sugar and white pepper. Evenly distribute the juice into a bowl.
2. Heat oil and sauté onion, ginger, garlic and chili. Add prawns and stir-fry until they change color. Pour cooking wine around the pot to remove any smell.
3. Add the bowl of juice and cook for 3 minutes. Remove the soup from the pot and serve. Arrange on a plate and sprinkle with chopped green onion.
