1. "Farewell My Concubine" is a traditional dish in Xuzhou, Jiangsu and Xiaoxian, Anhui. In order to commemorate Xiang Yu, the hero of Chu who made great contributions to overthrowing the rule of the Qin Dynasty, and to commemorate Yu Ji, the peerless beauty who cared about the destiny of the country and had awe-inspiring righteousness, the people of Xuzhou created the famous dish Farewell My Concubine, which has been passed down to this day. After liberation, Mao Zedong, Liu Shaoqi, Chen Yi and other leading comrades of the party and state came to Xuzhou to inspect the work, and they all tasted this famous dish and praised it. This famous dish was improved by the late famous chef Pei Jihong. It uses the images of chicken and turtle to make the historical theme of Farewell My Concubine have a euphemistic meaning and a wonderful artistic conception. The meat of chicken and turtle is fresh and tender, and the soup is rich and flavourful.
