Production technology of green tea
The picture of the making process of green tea is as follows:

1, pick up the goods

The first step in the whole process of making green tea is to pick fresh and tender tea leaves. Generally, in the early spring of each year, according to the standard of one bud and one leaf or one bud and two leaves, the tea buds used for making tea are picked manually. After picking, before the next step, roughly distinguish the tea buds according to their size and length, which is convenient for controlling the strength and heat in the production process.

Step 2 unfold and dry

Spread the green tea evenly on the container according to the size and dry it. The main purpose of spreading is to reduce the moisture in fresh tea buds, and the appropriate thickness is 5 cm. Make sure that the tea buds are kept even in the container, and turn them every 2 hours, up to 6 hours. At this time, when you touch the tea with your hands, you can feel that a lot of water has been lost.

3. It is being repaired.

The third and most important step in making green tea is frying. Tea buds with different tenderness and final quality are not needed. There are different ways to kill green, such as frying, roasting, drying and steaming. Stir-frying means frying with both hands, baking means baking, drying depends entirely on sunshine, and steaming means using steam.

Step 4 knead

Whichever method you choose, the fourth step in making green tea is kneading. After the dried green tea is spread and cooled, it is poured into a container, and the tea leaves are pressed in one direction with both hands to destroy the cells inside the tea leaves, so that the tea juice can be attached to the surface of the tea leaves, and obvious wetness can be felt when touched, or the tea leaves can be put into a kneading machine to be kneaded into eighty strips.

dry

The twisted tea leaves will enter the last drying process. You can heat the pot, pour in the tea leaves, and stir fry by hand until the original wet tea leaves become crisp, which will be broken by a gentle touch. After turning off the fire, put the green tea flat on the container to cool, put it in the container after it is completely cooled, and you can brew it directly the next day.
