In the 1940s, Liu Junying, the chef of Yingbinlou Restaurant, improved the home-cooked dish-oily tofu meat stuffing, changed oily tofu into small boxes of tofu, and added shrimp to the meat stuffing. Cooked tofu stuffing is full of heart, beautiful, delicate and tender, so it is called "meat is gold, shrimp is jade, and gold is inlaid with white jade box". Because the tofu block looks like a mirror box for women to dress up, it is named mirror box tofu. This dish is orange-red, fresh and mellow, with a combination of meat and vegetables. Suitable for all ages, it is a famous Wuxi dish that appeals to both refined and popular tastes.
