However, only after I became a mother did I understand the true meaning of this sentence. Mother is not only the person who brought us into this world and gave us life, but also the person who always protects us and thinks about us.
No, it’s just because my primary school student said, “I want to eat the food cooked by my mother.” After finishing my work in the morning, I took advantage of my lunch break and hurried home to make lunch for her. My colleagues all laughed at me for doting on my child too much, but what mother can be indifferent to the demands of her own child? As a working mother, I go home to cook during my lunch break. I can cook 2 meat and 2 vegetables in 30 minutes. It’s easy and delicious.
As a mother born in the 1980s, I not only have parents and children, but also work and family. It would be a lie to say that life is not tiring. But no matter what, I still think about my biological child all the time. Maybe this is the nature of being a "mother".
1. Braised meatballs
This braised meatball is my picky child’s favorite pork recipe. The meatballs are soft and tender, fragrant but not greasy, and also very tasty. It is stewed in the same pressure cooker as the potatoes and pork belly below. It tastes even better due to the aroma of pork belly and potatoes. Moreover, it will be ready in about 25 minutes.
It’s easy to make, just mince fresh pork tenderloin. Then, add an appropriate amount of salt, soy sauce, thirteen spices, sugar, starch and minced green onions, beat vigorously, and roll into walnut-sized meatballs, then stew them together with the pork belly.
2. Braised Pork Belly with Potatoes
My children don’t eat fatty meat, but they especially like potatoes stewed with pork belly. Therefore, the pork belly serves as a condiment here. In fact, the pork belly stewed in a pressure cooker is soft but not rotten, and has a salty and delicious taste. It is no worse than the pork belly stewed slowly over low heat.
First, wash the fresh pork belly and cut it into pieces. At the same time, wash, peel and cut the potatoes into hob pieces. Next, the key step is to cut another onion, preferably into onion rings with a thickness of about 1 cm. Then, place the cut onion rings neatly on the bottom of the pressure cooker. Then, place the cut potatoes on top of the onion rings, then place the cut pork belly and balled meatballs in sequence. Finally, mix a bowl of sauce with light soy sauce, dark soy sauce and soybean paste, and pour it evenly on the top meatballs of the electric pressure cooker. Cover the pot and simmer for 25 minutes. You can have two dishes in one pot.
3. Mix cucumber and chicory
While the pork belly and meatballs are stewing, wash some chicory and cucumber for cold dressing. To make it safer for children to eat, simply cut the yellow beans into strips, put them into a pot with water and cook them together. Boil the water for 2 minutes and then take them out and serve them cold. The cold sauce can be prepared according to personal preference. I usually use onions, ginger, minced garlic, soy sauce, sugar, salt, cumin, minced coriander and vinegar, boil them in a pot and then mix them with the children. Because my mother said that during special times, it is safer to heat the food you eat at high temperature before eating.
4. Lettuce and Mushroom Soup
She feels a little tired of eating meatball stew, so give her a bowl of light and delicious "lettuce and mushroom soup" to relieve her tiredness. The method is also simple. Wash the lettuce and mushrooms and tear them with your hands. Put it into the pot, add appropriate amount of water, salt and seafood soy sauce, and boil until the mushrooms and lettuce are cooked. When it is ready to be served, you can drizzle some cooked sesame oil to enhance the aroma and taste better according to the taste of your children.
This soup, the cold vegetables above and the rice steamed in the rice cooker are all made by using the pressure cooker to stew the meat. So when the meatballs and meat are stewed and out of the pot, the other meals are also on the table. A meal is ready in about 30 minutes, which is simple, hassle-free and time-saving.
