1. Rooted onion, washed and cut into sections;
2. Wash and slice fresh ginger for later use;
3. Wash the mutton and cut it into small squares;

6. Switch to slow fire and add soy sauce, cooking wine, onion, ginger, sugar and refined salt.
7. Bring the mutton to a boil, stop the fire when the soup is small, remove the onion and ginger, and mix in the starch and stir well;
8. Pour mutton and broth into a flat-bottomed dish, cool and condense into jelly;
9. Turn it into a rectangular thin piece with a knife.
