Remarks: eat spicy food, add Chili oil, stir-fry the pepper segments and mix well.
Refreshing Flammulina velutipes
Flammulina velutipes is my longest cold dish. The main ingredient is Flammulina velutipes, and the ingredients are shredded pepper, shredded carrot, garlic, salt, monosodium glutamate, sugar, vegetable oil and wood ginger oil.
Remarks: Flammulina velutipes should be rooted, blanched, thoroughly cooled, squeezed dry, and then mixed with other ingredients and seasonings.
Cold kelp silk
I like hot and sour kelp silk. Add some mature vinegar, Chili oil, salt monosodium glutamate, a little sugar, garlic and coriander powder and mix well. It's simple. Fresh kelp silk can be bought in the market now. Go home and wash, control the water, change the knife and mix with the seasoning I mentioned above.
Remarks: Cold kelp must be blanched after washing. The purpose of blanching is to remove fishy smell and mucus, and the processed kelp can be mixed with whatever flavor it wants.
Cold pig ears
Cooked pig ears are used in the cold salad, and cooked food and lo mei shops in the cooked pig ears market sell them. Shredded cooked pig ears, coriander, salt and monosodium glutamate. Cooked pig ears are salty, don't overdo it, just add some red oil or Chili oil.
