1. Prepare mutton (or pork and beef with different tastes) and various ingredients.
2. Dice the mutton, put pepper and cooking wine in the bowl, and marinate it very tender. Chop onion, ginger and garlic for later use.
3. Peel potatoes and carrots and wash them. Dice potatoes, carrots, celery sticks, green peppers, bean curd, day lily and mushrooms. Cut the tomatoes into pulp and put them in a bowl. Chop celery leaves and garlic for later use.
4. Mix noodles and make noodles. This step should be carried out in the second step, but I didn't edit it to the previous step when I thought about it later, so I have to explain it here. Noodles are the same as those in my recipe "Zhajiang Noodles", so I won't go into details.
5. Heat the pot on the fire, burn the oil (after bubbling), saute the shallots and ginger, stir-fry the meat until the Chili noodles change color, and add a little salt. Add mushrooms, diced carrots, diced potatoes, fungus and day lily in turn, continue to stir fry, add celery, green peppers and diced tofu, and adjust a little salt. Stir-fry until the potatoes are half-cooked, add the soup, submerge the ingredients in the pot and simmer over low heat.
6. When the potatoes are ripe, add tomato sauce, add enough soup, boil over high heat and stew over low heat.
7. Stew for about 15 minutes until the soup is thick, add a little powder to the soup, and adjust various seasonings until the taste is sufficient (everyone has different tastes, and adjust the amount according to the taste). Add chopped celery leaves and green garlic and turn off the heat.
8. Boil the water in another pot, cook the noodles and pour the noodles and soup together. A bowl of delicious minced meat noodles. In a bowl, show the taste, mix the oil, spicy seeds, vinegar and pickles. Mix a vegetarian dish with a cold dish, which is very suitable for people who eat noodles in the northwest!
