Fairy food, also known as fairy grass, is the same ingredient as the burning grass that everyone has eaten, but the fairy grass in Songxi, northern Fujian is fresher, and it is called fairy grass tofu in the southwest or middle.
Fairy food belongs to herbs, and the homology of medicine and food is a dietary feature of Fujian people. There is indeed a legend about fairy grass: it is said that some people in Fujian collected herbs to treat their heatstroke mothers themselves, and when they woke up, they found the naturally formed fairy grass jelly, so they collected fairy grass to cure their mother's illness. Because of its magical summer-heat effect, it is known as "Xiancao".
Fairy herbs are widely used and have the functions of clearing away summer heat, relieving fever and promoting diuresis. Indications for heatstroke, heat toxin, etc., so it is a seasonal dish in nature. Most leaf foods are green jelly-like dishes, some of which are called Guanyin tofu, and some are called immortal tofu. Whether Guanyin or immortal, it reflects its medicinal and disease-saving characteristics. The stem food is mainly made of grass jelly, white bean jelly, grass jelly and other desserts.
cooking fairy dishes is also a troublesome process, and my mother has done it well, and she has only eaten it once or twice since she was a child. First of all, you should pick, wash and crush it, use gauze to get juice, then mix and stir it with plant ash juice (some wood charcoal ash is used in my hometown or some branches are specially burned into ash and mixed with water), and let it stand and solidify, and the green and transparent jelly-like cold dish will be finished. It is very simple to eat it in my hometown, just add some light soy sauce water and pour sesame oil on it.
In the hot summer, a bowl of tender, smooth and cold fairy dishes really relieves summer heat and dryness, and makes people feel comfortable.
