Family recipe of fresh osmanthus honey

The home recipe of fresh osmanthus honey is as follows:

Materials/tools: 50 grams of fresh osmanthus, 200 grams of honey, 2 grams of salt, sieve, water, glass bottle, refrigerator.

1. Carefully pick out the bugs and dirt in the sweet-scented osmanthus.

2. Use a sieve to clean the flower stems, otherwise the pickled osmanthus honey will have a bitter taste. Be quick or the flowers will oxidize and become discolored.

3. Add a small amount of salt to the dried flowers and stir them up and down with your hands. The sweet-scented osmanthus is very fragile and cannot be used with force. After mixing, leave it for about 5 minutes. It will oxidize and change color over time.

4. Rinse it in clean water to remove salt and other dirt. Spread kitchen paper to absorb the water. While waiting for time, sterilize the glass bottle and drain the water.

5. Put one layer of osmanthus and one layer of honey into the bottle. The osmanthus will keep floating up and the honey will sink to the bottom. It doesn’t matter and just fill it up.

6. Cap the bottle tightly and put it in the refrigerator. Turn the bottle upside down every one or two days to let the honey soak into the sweet-scented osmanthus. It will be ready to eat after a week.
