Step 1
Buy pumpkin (Wogua). I planted this melon myself. The pulp is light and tender. If you like the taste of noodles, you can buy that dark yellow melon.
Second step
Slice. It is enough to serve a plate after cutting, because the melon will shrink after frying. The advantage of this kind of tender melon is that it is easy to cut, and it will be cooked after a while. Older melons taste waxy and slippery after being fried, but when they are cut ... I don't want to cut them again after I cut them once!
Third step
Just cut a little chopped green onion to taste. This dish is very light. Heavy taste is not good. Personally, I think it's ok to stick to chopped green onion.
Fourth step
Oil, pour a little base oil and stir-fry chopped green onion. When the oil is hot, pour in all the pumpkin slices and stir fry over high fire.
Step five
Key step 1: This dish is always hot. Stir-fry the pumpkin twice, and then add a little salt, about half a teaspoon, just to have a bottom taste. Stir-fry again and smoke (preferably Lee Kum Kee's), about two teaspoons. As long as the color is as shown in my picture.
Step 6
The second key step: always keep the heat. Stir-fry constantly (because pumpkins are easy to boil), prepare half a bowl of water, add a little each time the pot is dry, and add a small amount several times. Pour it all at once and it will be cooked. Stir-fry until you can easily crush the melon with a shovel, as shown in the figure. If you like soft food, you can fry more.
Step 7
The whole frying process takes 5 minutes, and if it is an old melon, the time will be a little longer. I like to mix rice with it. Because there is not so much seasoning, it is basically the natural taste of melon, and I feel particularly comfortable after eating it ~ Hey, I don't know if it is because I am old. It turns out that I don't eat soft and rotten food like pumpkin and sweet potato at all. I like to eat grilled fish in a spicy pot. The more lists you have now, the more comfortable you will be after eating ~
