Home-cooked practice of spicy chicken
1. Wash the prepared chicken with clear water first, then change the knife and cut it into chicken pieces with uniform size for later use.

2. Peel the onion, cut the ginger into powder, prepare a container, put the chopped onion and ginger into the container, then put the chopped chicken pieces, add a proper amount of spiced powder, salt, soy sauce and cooking wine, and marinate the corn starch for about half an hour after stirring evenly by hand.

3. Pour the right amount of cooking oil into the pot. After the oil temperature rises to 50% heat, add the marinated chicken pieces, fry the chicken with medium heat until cooked, and then take out the oil control.

4. The oil temperature in the pot rises to 70% heat, and the chicken pieces are fried again. Remove the fried chicken when the surface is golden yellow.

5. Pour a little seasoning oil into another pot. When the oil temperature reaches 50%, add dried red pepper and pepper and stir-fry until fragrant. Then add the fried chicken pieces and stir well. Add a little salt, monosodium glutamate, pepper and cooked peanuts and stir well.

6. Sprinkle a proper amount of cooked sesame seeds, shallots and a spoonful of red oil before cooking. Stir well and serve.
