Ingredients: soy sauce, cooking wine, vinegar, sugar, monosodium glutamate, pepper, oil, onion, ginger, ginger slices, star anise and starch.
1. Remove scales, gills and clean the sole.
2. Heat the oil in the pan, put the plaice head in the pan, fry until golden brown, and take it out.
3. Stir-fry onion, ginger, garlic and star anise in a pot, add cooking wine, vinegar, soy sauce, sugar and monosodium glutamate, and then add a proper amount of water to cook together to make juice.
4. Put the fried fish head into the juice, cook it with medium heat until the fish head tastes delicious, then add starch to the water, pour it into the pot and mix well until the juice becomes thick.
5. Put the fish head and juice together and sprinkle with pepper, and you're done.
