Sauté ed prawns with scallion
1. Wash the shrimp, cut off the whiskers and claws, treat the shrimp line with toothpicks, and wash the shrimp again for later use.
2. Pour more peanut oil into the pot. When the oil temperature is 50% hot, put a small amount of shrimp in the oil pan and fry until both sides are golden. Take it out for later use.
3. Put the fried shrimps in a dish for later use. Slice onion and ginger into shreds. Pour a small amount of peanut oil into another pot, add fried prawns, add shredded onion and ginger, stir fry together, add cooking wine, soy sauce, sugar and salt, and let out for 2 minutes.
Cooking tips
When frying food, there are two ways to measure whether the oil temperature reaches the required temperature:
1, people who often cook directly put their hands one foot away from the oil pan, and the oil temperature will bake their hands.
2. The second kind is suitable for novices and people who can't master the oil temperature well, that is, take a piece of shredded ginger or an onion and put the onion or shredded ginger into the oil pan when the oil temperature is almost the same. If there are many bubbles around the ginger (as shown below), it means that the oil temperature is OK. If there are only a little or sporadic bubbles, it means that the oil temperature is still a little low, and it will take two minutes. Get to a position where bubbles can quickly appear around the thrown food.
