As the saying goes, "Eat in Guangdong and taste in Zhanjiang". Cantonese cuisine, which we are familiar with, consists of three local flavors: Guangfu cuisine, Chaoshan cuisine and Hakka cuisine. If you look closely, you will find that there is no Zhanjiang cuisine. In fact, there are historical reasons. I found that the style of Zhanjiang cuisine actually belongs to Guangfu cuisine, which generally conforms to the eating habits of people in the Pearl River Delta and tastes similar to Shunde cuisine. The only difference is the composition.
Zhanjiang cuisine pursues the original flavor to a great extent. Famous boiled chicken, boiled shrimp, boiled fat sausage, etc. They are all cleverly cut or even cut knives in the processing of ingredients, which will completely maintain the shape of the ingredients themselves and avoid the loss of juice, such as boiled chicken. When you travel to Zhanjiang, you usually eat boiled chicken during the day and taste local seafood at night. From my experience of tasting Zhanjiang local food, I think Zhanjiang cuisine is mainly seafood, and Zhanjiang cuisine is not famous for a reason.
Friends who have eaten Zhanjiang cuisine should know that Zhanjiang cuisine has always been "original", and its production methods are mostly light and simple, lacking in changes and unable to highlight its selling points. The most intuitive performance is that the display is not beautiful enough, giving guests a feeling of low level. Moreover, Zhanjiang cuisine has been facing the people for many years, and there is almost no thinking orientation of high-end catering. Without innovative packaging, how can this way of catering become popular? Therefore, Zhanjiang cuisine has a good reputation among Cantonese cuisine, but it doesn't rank in the official ranking, which is normal.
Chaozhou-Shantou cuisine and Shunde cuisine are famous because people are willing to innovate their packaging and will naturally become well-known cuisines. On the other hand, Zhanjiang cuisine is original, simple to cook and poor in shape. How does this kind of food attract mainlanders to like it? Therefore, if Zhanjiang cuisine wants to go out of the local area, to China and to the world, it needs innovation and transformation to cater to the public's tastes. This is the reason why Zhanjiang cuisine is not famous.
