Family version of fried meat method (meat menu)
Ingredients: 300g pork belly slices with skin, right amount of green pepper, one spoonful of bean paste, right amount of garlic and a few slices of ginger.
Step 1: Cut green pepper into small pieces, slice ginger and mash garlic for later use.
Step 2: Heat the pan, without oil, directly pour in the washed and drained pork belly slices, and stir fry quickly until the oil comes out. There is no need to put oil in the pot, because the pork belly will precipitate oil after stir-frying
Step 3: Drain the fried meat slices and put them on a plate. (This is very important. After the oil is drained, the meat slices are tender but not greasy, so you won't eat too much high-fat oil.).
Step 4: After the meat slices are taken out, there is oil separated from the meat slices in the pot. Pour the garlic paste into the pot and stir-fry until fragrant.
Step 5: After the garlic is sauté ed, pour in the sliced meat again and continue to stir fry. Stir-fry for a minute or two, then add a spoonful of bean paste and stir well. Pour some water into the stir-fry to release the oil in the pork belly better and make the meat tender.
Step 6: Pour in the chopped green pepper and stir fry for a few minutes. Finally, pour in a spoonful of soy sauce and a spoonful of sugar to taste, stir well and serve. (You can also add a little chicken essence according to your personal taste before serving. )
Pork is a kind of common meat. Chinese medicine believes that pork has the functions of nourishing viscera, smoothing skin, tonifying middle energizer and benefiting qi.
