Ingredients: whitebait 150g, 2 eggs, cooking wine, salt, chicken essence, pepper, onion and ginger.
Exercise:
1. Wash and drain whitebait, then dry it with kitchen paper towels and marinate it with a little cooking wine and a little salt for later use.
2. Cut the onion into chopped green onion and the ginger into Jiang Mo.
3. Break up two eggs, add salt, chicken essence, chopped green onion, a little pepper and a little cooking wine and mix well.
4. Hold the oil pan. When the oil is hot, add Jiang Mo and stir-fry until fragrant.
5. Pour the whitebait into the oil and take it out.
6. Put the oiled whitebait into the egg mixture and mix well.
7. Heat the remaining oil in the pot. When the oil is hot, pour the whitebait egg liquid, turn the pan, and stir fry with a spatula when the egg liquid is slightly solidified.
8. Stir fry for two or three minutes until the eggs are completely solidified and then stir fry for a while. Eggs are golden yellow and can be cooked when they feel dry. I should have put more onions, but I happen to have some onions on hand, so I put some green peppers in it for the color.
Tip:
1. Some people like to put raw whitebait directly in the egg liquid and fry it in a pot. I like to fry whitebait first. The whitebait is basically cooked, put it in the egg mixture and fry it together. I feel much better.
2. Remember to dry the surface of whitebait with kitchen paper or clean cloth, and then marinate it with a small amount of cooking wine and salt. If there is too much water, the pot will burst when frying.
You can also make delicious and light whitebait porridge. it wont hurt you to try it
Ingredients: rice 1 cup, small whitebait 2 Liang.
Accessories: shredded ginger, pepper and salt.
Whitebait porridge practice:
1, put the fresh whitebait into the filter screen, wash it slowly with running water, and drain the water after washing;
2. Wash the rice;
3. Add enough water to the pot, add rice after boiling, turn the water to a low fire to keep the pot rolling, cook rice porridge, add whitebait and shredded ginger, cook for 3 minutes, turn off the fire, add salt and pepper and mix well to serve.

1, silver fish is tender, don't cook it for a long time, keep it fresh and delicious;
2. Method of cleaning whitebait: Clean the fresh whitebait, put it in a filter, and slowly rinse it with running water; If it is dry whitebait, soak it in clean water 15 minutes, remove some salt, and add salt when cooking;
