Wash tofu, cut into thick slices, and control moisture.

Add oil to a non-stick pan and fry tofu until golden brown.
Take another wok, add oil, add ribs and stir-fry;
Add onion and ginger and stir-fry;
Add cooking wine, soy sauce, salt and water, and simmer until the ribs are soft and rotten;
Stew until floating foam appears in the process, and rinse it clean;
Stew with tofu.
