My baby has been clamoring for fried noodles. The outside is not very clean, so I plan to fry it myself. Fried noodles are a special delicacy here in Wenzhou.
Ingredients needed: dried noodles: enough for 4-5 people
radish: 2 pieces
Bacon, cabbage: appropriate amount
Eggs: 2
Soaked mushrooms: 5-6
Cooking steps:
1. Dice mushrooms, bacon and carrots, and fry the eggs Chop the cabbage into fine pieces and set aside.
2. Put water in the pot and bring to a boil, add dried powder and boil again for about 4-5 minutes. Check the hardness of the dried powder. You can remove it, drain it, and rinse it with cold boiling water.
3. Put an appropriate amount of oil in the pot, heat it over high heat and then turn down the heat, pour in the drained flour, stir-fry with a spatula, add diced carrots, diced bacon, diced mushrooms, and add Salt, cooking wine, and soy sauce, stir-fry constantly during the process (use chopsticks and spatula together to fry more evenly) to prevent sticking to the pan.
4. Finally, pour in the chopped cabbage, stir-fry evenly, add a small amount of boiling water, stir-fry again, and it's ready.
