Ingredients: 250g sour cowpea, minced meat 100g, rice wine 1 tablespoon, 2 tablespoons soy sauce, a small amount of light soy sauce, a small amount of white pepper, dried pepper 10 slice, a small spoon of sugar, ginger 1 slice, and a proper amount of cooking oil.
Exercise:
1. Soak the sour cowpea in cold water for 20 minutes, clean it, then dry it by hand and cut it into hard particles for later use. Chop ginger and cut dried Chili into sections.

The way of doing things
1, take the cooking oil out of the pan, pour in shredded pork ear, stir-fry, pour in rice wine, stir-fry, add in light soy sauce and stir-fry.
2, add a small amount of soy sauce king, stir fry evenly and color, pour in Chili slices, ginger slices and garlic paste, stir fry evenly.
3. Introduce a small amount of cold water, cook until it becomes loose, sprinkle with Dongru, and stir-fry the fragrance.
Fried lean meat with shredded beans
Food required: raw pork 120g long bean 250g soy sauce, 4 tbsps rice wine 1 tbsps salt, cassava starch 1 tbsps cooking oil, ginger 1 2 cloves garlic.
Cooking process:
Wash and shred fresh pork and put it in a bowl, then add two spoonfuls of soy sauce, a little salt, corn starch and one spoonful of cooking oil, mix well and marinate for fifteen minutes.
Tear off the long beans, wash them and cut them into shreds. Ginger and garlic are also chopped for later use.
Boil water in a pot, pour in a little cooking oil, add shredded beans, blanch for 3-5min, scoop up and drain.
In addition, pour an appropriate amount of cooking oil into the pot to boil, add the marinated meat slices and stir-fry until the color becomes light and broken. Add ginger and garlic to the oil in the pot, stir-fry over low heat to give a fragrance.
Then add shredded beans, stir-fry in red oil for 2 minutes, then add soy sauce and appropriate amount of salt and stir-fry evenly. Finally, add the fried meat slices, mix and stir evenly, and serve.
