Cut onion, ginger and garlic into sections for later use.

Remember to remove the black film from the fish belly when you buy the fish tail, then add the scallion, shredded ginger, cooking wine, white pepper and a little salt and marinate for 15 minutes.

Drain the fish, pat it with starch oil, heat the pot, add two pieces of ginger and stir-fry until fragrant, then add the fish tail and stir-fry until it is out of the pot.

Fry until golden brown.

Leave some oil in the pan, saute ginger and garlic slices and bean paste.

Put the fried fish in, and then pour in half a bowl of water.

Add soy sauce, cooking wine and sugar, cover the pot and cook for about 5 minutes. Remember to open the lid half, scoop up the soup and pour it on the fish.

Turn off the heat when the soup is thick, sprinkle some chicken essence and chopped green onion, and serve.
