Preparation materials: 750g red pomfret, salt, soy sauce, chicken essence, onion, ginger, garlic, star anise, blended oil and thirteen spices.
1. Remove scales and internal organs and clean red pomfret, as shown in the following figure.
2. Cut the side knife on the fish, as shown in the figure below.
3. Prepare garlic, onion, ginger and star anise, as shown below.
4. Put oil in the pot and have a big fire, as shown below.
5. Fry the fish in oil.
6. Pour in water, garlic, onion, ginger, star anise, wine, vinegar, cooking wine, soy sauce and chicken essence, and stew over high fire. After the soup is boiled, stew it over medium heat, which takes 15 minutes.
7./kloc-Turn off the fire after 0/5 minutes, so that the stewed pomfret is ready.
