How to make tofu at home?

Juicing: soak the beans in 5 times the water for more than a day. Then when grinding the soy milk (I use a Huiren juicer), use a spoonful of beans and a spoonful of water, just use the water used to soak the beans. After grinding it completely, soak the bean dregs in water. The water should be enough to soak the bean dregs thoroughly. Squeeze the soaked bean dregs again. Mix the twice-pressed soy milk together and pass it through a gauze or fine sieve because there is still bean residue.

Then boil the soy milk. Before boiling the soy milk, mix the brine with 80-degree boiling water at a ratio of 1:3. I usually use 10 grams of solid brine for 500 grams of beans, and mix it into 30-40 grams of liquid brine

Boil soy milk: When boiling soy milk, stir it constantly with a spoon and prepare a cup of cold water. Just open it and get a little water, open it three times. Pour the soy milk into a basin and cool to 80 degrees.

Put some salt brine: Pour the soy milk into a basin, cool it to 80 degrees, then pour in the prepared brine, little by little, with your left hand, stir slowly with a spoon in your right hand, be sure to slow down. When the soy milk reaches a little bit of brine, stir it. When you see that the soy milk has flocculent appearance, it is almost ready when it reaches a little bit. The spoon should be moved slowly. When the floc becomes larger and larger, stop pouring the brine and stirring. Let it rest for about 10 minutes. There is clear water on top and bean curd on the bottom.

Press tofu: Place a leaky box or small plastic basket, first put soaked gauze (the tofu cloth I bought) on it, then put the tofu into the tofu box with a spoon, and pour it all After entering, fold the gauze over and cover it on the bean curd, and put a heavy object on top. You can also use a basin of water to press it on.

The tofu will be ready in 10-15 minutes
