1. Wash cowpea, cut into sections, blanch in water, and cut dried pepper into small pieces for later use.

Exercise 2
Ingredients: 250g tender beans, 1 egg.
Accessories: 20g green pepper rice, a little coriander powder, mashed garlic 10g, red oil 15g, 30g starch and 30g flour.
Making:
Step one. Cut the beans into 6 cm long segments, put them in a boiling pot with refined salt, cut them and take them out; Put the flour and starch into a bowl and mix well. Beat in eggs. Add some water and a little salad oil to make an egg paste.
Step 2: Clean the pan, add salad oil and heat it to 70%. After the beans are evenly hung with egg paste, put them into the pot one by one, fry until the color is golden and cooked, and drain the oil.
Step 3: light another pot, add red oil to heat it, add garlic paste, green pepper rice and coriander powder and stir-fry until fragrant. Finally, add beans, add refined salt and monosodium glutamate and stir-fry evenly. Take out the pot and serve.
Exercise 3
Ingredients: 500g of long bean.
Ingredients: 20g dried pepper and pepper (you can add more if you like spicy food), 5g shredded ginger.
Seasoning: a little salt and chicken essence.
Practice: 1. After washing and drying the long beans, break them into small pieces of about one inch, and cut the dried peppers into corresponding small pieces.
2. Turn on the fire, pour the oil into the wok, and when the oil temperature is 60% hot, pour in the beans and ginger and stir fry. Add pepper and dried pepper and stir fry constantly. Matters needing attention in making fried beans:
1, be sure to fry the beans. When you feel almost cooked, try it first, and then put the ingredients after confirming the heat. If the beans are not cooked, they will cause poisoning!
2. Put the ingredients when the beans are almost cooked, otherwise the fried beans will lead to the blackening of the ingredients.
