Shrimp, persimmon pepper, red pepper, starch, cooking oil, garlic, cooking wine, salt and pepper.
The practice of salted shrimp
1. Cut the whiskers of shrimps, rinse them twice with clear water, then drain, remove the pedicels and seeds of green peppers, and cut into pieces.
2. Put the shrimp into the dish, pour in the cooking wine and mix well, then sprinkle with dry starch and mix well, so that the starch is evenly wrapped on the shrimp.
3. Peel and chop garlic. Pour the oil into the pot. When the fire is heated to 40% heat, add minced garlic, reduce the heat, slowly fry until golden brown, and take it out.
4. Pour the oil into the pot, heat it to 70% heat, fry the shrimps one by one in the oil until the shrimps turn orange-red, about 2 minutes, and drain the oil fully after taking out. Pour the oil out of the pan.
5. Heat the shrimp in the pot, sprinkle with salt and pepper, stir fry evenly, pour in the fried garlic and chopped green pepper, and stir fry for a few times.
Tip: Shrimp is sticky because it is covered with a thin layer of starch. When put into the oil pan, it is best to clamp them with chopsticks and put them into the oil one by one to prevent the shrimps from sticking to each other.
