2. Break the back bone, as shown in the figure below.
3. Pour in cooking wine, light soy sauce, dark soy sauce, scallion, ginger slices, salt, sugar, Chili noodles, oyster sauce, pepper noodles and spiced powder, as shown in the following figure.
4. Then knead well, as shown in the figure below.
5. Cover with plastic wrap and refrigerate for one night, as shown below.
6. Put a little less oil in the pot and fry the chicken skin first.
7. Cover the fire and fry slowly 10 minutes.
8. Turn over and cover again, and fry for 10 minutes.
9. Dry and cut into pieces.
