What is brine?
Bad brine is a condiment, and bad brine is also called bad oil.

Bad brine is a kind of tank brine, which is refined from rich refined juice obtained from aged liquor essence and juice mixed with different components. No precipitation, transparent and hidden, can be used for steaming, soup, cooking and so on.

"Bad" is a cooking method, and "goods" is a general term for things. Together, it refers to food made from distiller's grains. Rotten goods are quite common in the south of the Yangtze River, firmly occupying a place on the table of Jiangsu, Zhejiang and Shanghai people. Distilled spirit is a kind of Luzhou-flavor fermented grains juice extracted from old distiller's grains by scientific methods, and then mixed with hot sauce to highlight the aroma of old distiller's grains. Fresh and salty taste is moderate, you can dip in meat and vegetables to eat.

Ready-made dry fragrant grain can not be directly used for seasoning, but must be processed into fragrant residue before it can be used. The amount of materials used should also be accurate, one kilogram of bad fragrance, four kilograms of yellow wine, five or two sugars, three or two salts, and a little osmanthus. First, the distiller's grains are melted with yellow wine, mixed with sugar, salt and osmanthus, left standing for half an hour to make the dregs sink, skimmed off the marinade, and then filtered with gauze.

In daily life, bad brine can be kept in the refrigerator in a bottle, which can prevent the bad brine from turning sour when heated. Rotten pot-stewed dishes originated in Jiangnan, and people in Shaoxing, Hangzhou, Ningbo and Wuxi like them very much. In these places, bad salt water tastes slightly different.
