1. It is said that tofu was invented by Liu An, the grandson of Emperor Gaozu Liu Bang, who accidentally used gypsum to order bean juice during alchemy. Tofu gradually spread widely in Song and Ming Dynasties. Potatoes, also known as potatoes, originated in Peru and Chile in the Andes of South America, and were not introduced to China until the Wanli period of the Ming Dynasty. So Su Shi has never tasted potatoes.
Secondly, Su Shi, a famous writer, calligrapher, painter and politician in Song Dynasty, was an influential figure in history. When he was demoted to Huangzhou to be Yong Lian's assistant, he lived a simple life, but he had unique views and tastes on diet. According to legend, Su Shi once cooked in person and made the most delicious food with the simplest ingredients. Tofu is one of his favorite ingredients.
Thirdly, Su Shi's love and admiration for tofu can be traced back to his youth. At this time, he met an official named Yang, a cultured man who paid attention to diet. He once held a banquet with tofu as the theme in his mansion, and invited many scholars including Su Shi to attend. At this banquet, Su Shi tasted all kinds of tofu food and was deeply attracted by its delicacy. He thinks this kind of food is not only delicious, but also has high nutritional value.
The practice of Dongpo tofu
1. Dice tofu and sprinkle with salt, flour and egg liquid. Heat the oil for five minutes, fry the tofu until golden brown, remove it, and dice the ham, mushrooms and peppers for later use. Boil the soup pot, burn the vegetable core until it is broken under water, then put it on a plate, heat the oil to 80%, add onion, ginger and minced garlic, stir fry, and add cooking wine, pepper, diced mushrooms and other auxiliary materials.
2, add a little water, add the fried tofu and simmer for a few minutes. After the tofu is introduced, the thick soup is collected by fire, and chopped green onion is sprinkled after serving.
Su Shi often uses this dish to entertain visiting friends. Later, everyone felt very novel and asked for advice. Su Shi, who has always been open-minded, was very happy and shared his recipes without reservation. Since then, Dongpo tofu has spread.
