Raw materials: grass carp fish 1,
Accessories: celery100g, Pleurotus ostreatus100g.
Marinated fish fillet materials: cooking wine 6g, salt 2g, pepper 2g, 1 egg white, corn starch 5g.
Five sesame oil materials: 2 pieces of star anise, 2 pieces of cinnamon 1 piece, 2 pieces of fragrant leaves, 2g of fennel, 2g of galangal, 20g of pepper 10g, and a proper amount of vegetable oil.
Other seasonings: 5g of onion, 5g of ginger, 5g of garlic, 2 tablespoons of Pixian bean paste, 5g of fresh soy sauce 1 tablespoon, 5g of cooking wine, 5g of salt 1 gram, 0g of pepper 1 tablespoon, 3g of pepper and 5g of dried pepper.
Fujian Chef School (Fujian Chef Training) interprets the practice of spicy boiled fish slices;
1. Slice the fish, add salt, pepper, cooking wine and egg white, and then add a proper amount of corn starch, and beat for 10 minute.
2. Prepare five portions of sesame oil. This kind of oil will make boiled fish particularly fragrant. You can make more, and it is also very good with vegetables or other spicy dishes. Pour the oil into the pot, put all the materials needed for the five sesame oil, and heat it on low heat until the seasoning is fried. Take out the spices (don't throw them away) and pour out the five sesame oils for later use.
3. Leave a little sesame oil in the pot, stir-fry onion, ginger and garlic, stir-fry red oil in Pixian spicy bean paste, then pour some spices from the sesame oil into the pot, then add cooking wine and soy sauce to cook and stir well.
4. Boil in boiling water, add a little salt, pepper and sugar, adjust the taste and cook for a while, then remove the seasoning inside, and the soup base will be ready.
5. Blanch celery and Pleurotus ostreatus with the prepared spicy soup, then remove them and spread them at the bottom of the pot.
6. After boiling again, put the marinated fish slices in and cook for about one or two minutes until the fish slices turn white, then turn off the heat.
7. Put the fish fillets and soup together in a pot with side dishes.
8. Take another pot and pour a part of the five sesame oil prepared before into the pot. Add appropriate amount of pepper and dried pepper segments, fry with low fire until the color of pepper changes slightly, turn off the heat, and then pour hot oil on the fish fillets to serve.
