2. Prepare a basin of cold water, and put the cooked pig's trotters into the water for cleaning. Then pour out the water in the basin, replace it with new water and clean it again.
3, another pot, open the fire without pouring oil. Put the washed trotters into the pot (note: fry the skin first). If there is enough fat in the trotters, you can use the fried oil as the next step. If pig's trotters have no fat oil, you can add a little oil. Fry in oil until the pigskin is golden yellow.
4. Fry the pigskin until golden brown, turn to high heat, add minced garlic and chopped green onion and stir fry.
5. Add yellow sand sugar and stir fry slightly to color the pigskin. Then add wine, water, soy sauce, oyster sauce, cola and white pepper. Boil until boiling, turn to low heat, cover the pot and stew for 1-2 hours (juice collection).
6. After1hour, check whether the meat is about to be boned and whether the tendons inside are soft. At this time, the trotters can be cooked. Take a clean plate and take the trotters out of the pot. If there is too much marinade in the pot, you can cook it over high fire until the juice is collected, pour it on the pig's trotters and sprinkle some onions.
