Exercise:
1. Remove fish scales and internal organs, and rinse with water. Shred onion, slice garlic, shred pepper and cut orange into large pieces for later use;
2. Put the fish in a bowl, add salt, cooking wine, shredded onion, garlic slices, pepper rings and several oranges, and marinate for 60 minutes;
3. Dry the water inside and on the surface of the fish belly with a kitchen paper towel, coat the pot with a thin layer of salad oil, put the fish in the pot, fry for 2 minutes on each side, and fry the shredded onion, garlic slices, pepper rings and orange slices until cooked.
4. Put tin foil on the baking tray, spread orange slices evenly, then cover the fish with shredded onion, garlic slices, pepper rings and orange slices and wrap them tightly; 5. Preheat the oven to 200 degrees, set it in the middle layer, and bake for about 18 minutes.
