How to cook chicken wings stewed with mushrooms
Wash the chicken wings with clean water, remove and drain.
Soak the mushrooms in hot water 20 minutes in advance, wash and set aside.
Cut the green onions into sections, slice the ginger, and cut the garlic into cloves.
Put oil in a pot and when it is 40% hot, add rock sugar and melt it.
After the rock sugar has completely melted, add the drained chicken wings and stir-fry.
Stir-fry for 4 or 5 minutes until the chicken wings turn golden brown, then add warm water until the water basically covers the chicken wings.
After boiling the pot, add onions, ginger, garlic, salt, a few star anise, a few peppercorns, pour in an appropriate amount of dark soy sauce for coloring and stir evenly.
Add the mushrooms, cover the pot, reduce to medium-low heat and simmer for about 10-12 minutes. Use chopsticks to poke the chicken wings. They should be cooked by now.
Bring it to high heat to collect the juice.
