Recommend some recipes of my favorite dishes, which are relatively simple, economical and quick.

Douban carp

Raw materials:

1 carp (about 750g), 1 tender tofu, 2 shallots, 1 ginger, 6 cloves of garlic,

1 pepper, 1 coriander, and appropriate amount of starch.

Seasoning:

800g edible oil (actual consumption 100g), sesame oil 1 tsp, 2 tsps soy sauce and 3 tsps cooking wine.

Spicy bean paste 1 tsp, refined salt 2 tsp, sugar 2 tsp, monosodium glutamate 1 tsp.

Exercise:

1. Carp is gutted and scaled, then washed and drained, and oblique knives are drawn on both sides of the body.

2. Heat the oil in the pan, fry the carp, remove it and drain it, and put it on the plate for later use.

3. Dice tender tofu, wash and cut onion, ginger, garlic, pepper and coriander.

4. Put a proper amount of oil in the pot, heat it, first saute shallots, ginger, garlic, pepper and spicy bean paste, then add cooking wine, add soy sauce, salt, sugar, monosodium glutamate and water, boil it, add diced tofu, cook for a few minutes, thicken it with water starch, then pour in sesame oil, sprinkle coriander and pour it on carp while it is hot.

Two methods of cooking sliced meat

Choose 250-500g lean meat (depending on the number of people). Good leg meat and tenderloin will do. Slice along the grain (cut pork and cross-cut cattle), 2-3 mm is the best, too thick, it will be overcooked. If it is too thin, it is not smooth enough. Add salt, a little soy sauce, cooking wine, monosodium glutamate, pepper, starch and egg white (this is the secret of tender and smooth meat). Grasp it evenly by hand (some people use chopsticks as a foil, and the seasoning cannot invade the texture of the meat, so it is not recommended). Heat an oil pan, add shredded ginger, shredded garlic, pepper, dried pepper and Xixian watercress, and stir-fry until fragrant. The main reason is that the watercress in Xixian County is not spicy enough, and the amount of pepper and pepper varies from person to person. Add water, bring to a boil, and add the sliced meat. After the sliced meat turns white, cook for a minute or two and take it out. (You can try it for the first time, and the meat slices will not taste good when cooked), add Chinese cabbage (adding Chinese cabbage first will drag the oil away, and then cook the meat will lose its fragrance), pick it up after cooking, spread the bottom, and spread the cooked meat slices. Finally, put a proper amount of dried pepper, pepper and chopped green onion on the meat. Heat a cup of oil for 6 minutes and slowly pour it on pepper and pepper. Come on, you're done.

Stewed radish

Ingredients: white radish 250g, pork150g.

Production method:

Wash white radish and cut into pieces, wash pork and cut into pieces, add sugar into hot pot and stir-fry with oil. After the meat is evenly colored, add soy sauce, cooking wine, onion ginger and warm water, cover the pot and boil, then continue to stew cook the meat with low heat. After cooking, pour the boiled radish into salt and cook it again until the meat is cooked, then add monosodium glutamate.

Homemade braised pork

1. Cut the bought pork belly (that is, lean meat and fat meat are layered) into 1 cm square (regardless of thickness, only consider length and width);

2, put oil in the pot (more), add a spoonful of sugar (white sugar is also ok) after heating (more), stir fry until it is paste (there should be smoke in the pot at this time, don't be afraid). Pour chopped meat and seasonings (thick slices of ginger, garlic, cinnamon, dried peppers, star anise and dried tangerine peel (not dried tangerine peel)), stir-fry for three minutes, and then the meat turns dark red;

3. Add a proper amount of salt, a spoonful of soy sauce, 1/5 tablespoons of vinegar, half a spoonful of sugar, two tablespoons of cooking wine, half a spoonful of chicken essence, and clear soup (cold water is also acceptable) until the meat is submerged for 3 mm, and the fire boils (it begins to smell);

4. Pour into a saucepan and simmer for 1.5 hours. At this point, the soup should be small and sticky (if there is too much soup, you can collect the soup on high fire, but you should stand by and watch), add green pepper (not very fat lantern pepper), add some coriander, then taste the salty taste and simmer for 3 minutes.

Serve the dish before the saliva drips into the pot, and secretly eat another piece without others knowing.

1 Braised fish pieces (with bones)

Exercise:

1, one fish, viscera and scales removed, washed, diced and salted for 30 minutes.

2. Shred ginger, chopped garlic and chopped onion. Cut a dried pepper that likes spicy food into three sections.

3. Put two tablespoons of oil in the pot until it smokes. Add shredded ginger, minced garlic and dried peppers. Don't burn them. Immediately put the fish pieces in, pour the soy sauce, wait for the fish to fry on both sides, put a spoonful of sugar and add half a bowl of water. 4. Cover the pot and simmer for 3-5 minutes, then bring the pot to the boil, and take the onion out of the pot. Don't mix them together, the fish pieces will break. They are jealous.

Braised green beans

Ingredients: half a catty of mung bean, half a catty of fat, half a catty of pork belly, a little onion, and a cup of dry red spicy coke.

Practice: 1, pork belly peeled (don't peel it if you like to eat it) and cut into thin slices for later use.

2. Remove gluten from mung beans, wash and control water for later use.

3. Stir-fry the dried red shallots in the oil pan.

4. Stir-fry the fragrant pork belly. When pork belly is fried in oil, stir-fry the green beans together. Don't use too much firepower, just medium firepower. Keep stirring and be careful not to stick to the pan. When it is ripe, add salt, cooking wine, a little vinegar, a little sugar and Laoganma bean paste, stir-fry for two or three minutes, add a little water to stew, and the soup can be served.

Slippery tofu

Classified vegetarian dishes

600g of raw tofu.

Seasoning soy sauce, monosodium glutamate, sugar, starch, sesame oil, pepper noodles, onion, ginger and soybean oil.

(1) Cut the tofu into pieces with a square of 1.5cm, soak it in boiling water, and take out the purified water. Cut onion and ginger into powder.

(2) Put oil in the spoon, heat it, put minced onion and ginger and pepper noodles in the wok, then add soy sauce, boil it, pour in tofu, add monosodium glutamate and sugar, turn over quickly and gently, simmer for about three minutes, thicken it with starch, and sprinkle with sesame oil.
