1, white chop rabbit: clean the rabbit, put it in a pot with cold water, add onion ginger, cooking wine, pepper, salt and a little alkaline noodles, cook until it is broken, stick it in bloodless water with a toothpick, turn off the fire, naturally cool, take it out and cut it into small pieces.
2. Put peanuts and a bag of salt into the pot and stir-fry with low fire until the crackling stops. Turn off the fire immediately, sieve out the salt and put it in the pot to cool, and remove the peanut coat;
3. Chop the watercress and fermented soybean, heat the oil in the pot to 30% heat, add the watercress to produce red oil, then add the watercress and stir-fry it with low fire, and let it cool;
4. Mash the ginger and garlic into mud and add the soup of boiled rabbits to make ginger and garlic water;
5. Mix crispy bean paste, ginger and garlic water, red pepper, sesame oil, soy sauce, sweet and sour (ratio 1:2), salt, chicken essence, pepper noodles and pepper oil into flavor juice, and taste while mixing until it is ready;
6. Put the rabbit meat into the sauce, stir-fry the peanuts with salt, mix well and put them on a plate, and sprinkle with chopped green onion.
