Lingbao Mutton Soup?
The Hangu Pass Ancient Road is an important passage from the Northwest to the hinterland of the Central Plains. There is a small county called "Lingbao" on the ancient road. Because Lingbao is so rich, the "mutton steamed buns" from Xi'an, Shaanxi, the "beef soup" from Shanxi, and the "beef and mutton steamed buns" from the Hui people have come, making the competition in Lingbao's catering market more intense. Survival of the fittest, many local chefs lost their jobs. Later, Lingbao's chefs went to Xi'an's "Mutton Steamed Bun" restaurant to wash dishes, to Shanxi's "Beef Soup Bun" restaurant to light the fire, and to "Hui Min Restaurant" to clean. The humble chef Lingbao worked hard and learned skills, and finally created a more distinctive "Lingbao mutton soup". ?
Nowadays, "Lingbao Mutton Soup" has entered Xi'an City in the west, crossed the Yellow River in the north to Shanxi, and traveled east to Zhengzhou. It is not only fragrant in the Central Plains, but also reaches Beijing. It seems that Lingbao chef never shows off anything to diners. I saw them silently selecting, smashing, soaking, braising, boiling, and assembling the bones without any complaints.
