Ingredients: ribs, potatoes, carrots, onion ginger, star anise, fragrant leaves, cooking wine, salt, rock sugar, soy sauce and oyster sauce.
Practice steps:
1. Let's go to the market to choose a fresh rib, and then ask the boss to cut it into small pieces for you. After you take it home, you don't need to clean it, just put it in a basin. Then add 1 tbsp salt, add enough water, stir and start soaking the ribs. Pork ribs can't be directly cooked or blanched, so "soaking" is the most important step.

2, ribs should be soaked for at least half an hour, if you have time, it is better to soak 1 hour or more. During the ribs soaking, we cleaned potatoes and carrots, peeled them and cut them into hob blocks. There are also onions and ginger, cut into onion segments and ginger slices for later use.
After the ribs are soaked, we will take them out and rinse them again with clear water. Then you don't need Zhuo. We can just prepare stewed ribs. Because after blanching, it is likely to make the taste of ribs dull, but after soaking, the ribs are actually very clean.

After frying the fragrance, add a proper amount of hot water to the pot and you can start stewing the ribs.
5. After the fire boils, simmer for about 3 or 40 minutes, then add potatoes and carrots and continue stewing for 20 minutes. Finally, add the right amount of salt, plus a little oyster sauce, and finally collect the juice on high fire.
