Misgurnus anguillicaudatus drilling tofu: "Misgurnus anguillicaudatus drilling tofu" is a favorite dish of Tujia people. The baking method is as follows: first, put the loach into a water tank or jar, pour in clear water and a little salt, feed it overnight, then rinse it with clear water, and pour the fresh loach into the tender tofu.
