Oyster and Cordyceps flower stew
French oyster bisque
Recipe introduction Oysters are called oysters by Taiwanese. You can also use clams or fresh scallops to make this soup.
Ingredients
20 oysters, 1/2 cup white wine, 3 tablespoons butter, 1/2 cup flour, 3 cups milk, 2 cups chicken stock, 1/2 fresh cream 2 cups, a little salt, a little pepper
Method
(1) Wash the oysters, drain them, put them in a soup pot, and add 1/2 cup of white wine , cover the pot and cook over low heat for about 2 minutes. If you find that the soup is slightly dry, add a little water and turn off the heat and set aside.
(2) Preheat the pot, put in the butter, then stir-fry the flour over low heat evenly, add milk, chicken stock and seasonings, turn to medium heat and bring to a boil, finally add in the ingredients from step 1 Mix the oyster soup and fresh cream together and serve in a soup plate.
