Ingredients: noodles (raw), pork tenderloin, 1 mustard, 1 winter bamboo shoots, salt, cooking wine, soy sauce, vegetable oil and sugar.
Practice of Katakawa
1, bamboo shoots are washed and sliced, meat is sliced, pickled with wine and salt, and cabbage is washed.
2. After the oil is hot, stir-fry the meat slices, take them out after discoloration, add the cabbage, stir-fry the bamboo shoots evenly, add soy sauce, add the meat slices and add sugar to taste, and stir-fry evenly.
3. In another pot, boil the water and put the noodles. After cooking, take them out and let them cool.
4. Put half cooked bamboo shoots and sliced meat into a wok and add water to boil, add noodles, take them out after boiling, put them in a bowl, add fried cabbage and bamboo shoots as ingredients, and sprinkle with onions.
Tip: Choose lean meat from pig's hind legs, so it tastes tender.
