Roasted ribs with dried bamboo shoots

Ingredients: ribs 1 kg, 2 bamboo shoots, onion, ginger, rock sugar, salt, cooking wine, light soy sauce.

Exercise:

Chop the ribs into small pieces, wash the blood off them, and soak them in water if necessary.

Add cold water to the pot, add the washed ribs, add a little cooking wine, boil water over high heat, and turn off the heat after the ribs change color.

Take out the ribs and rinse the floating foam on the ribs with warm water for later use.

Peel bamboo shoots and cut into pieces, and wash them with warm water for later use.

Knot a handful of onions and slice ginger.

Heat oil in the pot, add appropriate amount of rock sugar, slowly heat and dissolve, and stir with a spoon.

When the sugar color changes and the surface begins to bubble, quickly add the ribs and stir fry quickly. Don't wait for the sugar to boil.

Add a proper amount of cooking wine, a spoonful of soy sauce and a little soy sauce and stir fry.

Put the onion and ginger slices into the pot, and pour the appropriate amount of boiling water until the ribs are submerged. Bring boiling water to a high fire, and then turn to medium heat for cooking.

When two thirds of the soup is left, put the processed bamboo shoots into the pot, stir and continue to stew.

When one third of the soup is left, add salt to taste, stir, and then turn to high heat to collect the juice. Keep stirring until there is no soup left, then turn off the heat and serve.
